Cotija - Añejo cheese is a Mexican cheese aged from cow's milk and named after the town of Cotija, Michoacán. This white dry hard cheese is easy to grind and grate, so it is often sprinkled over tacos, burritos and enchiladas.
South America Cheese Factory. We are a family business located in the capital of Lower Bavaria, Landshut.
Since August 2003 we produce cheese in the original Latin American way.
The original recipes and know-how come from the parental cheese factory with headquarters in Managua, Nicaragua. Now under the management of the brother Jose Gondalez, different varieties of the cheeses, appreciated and widely distributed in South and Central America, have been produced here for 40 years. Soon the demand exceeded the production capacity at that time.
Due to the constant expansion of the production plant, the rooms of the old cheese factory soon became too cramped.
Since moving to new production premises in Altdorf near Landshut, however, we have been able to solve this problem as well and now boast significantly increased capacities.
Not size, but quality is the salient feature of our cheese dairy.
